Chicken Roll with Integral Mango
Ingredients
500g chicken breast
2 cloves of garlic
1/2 lemon
Salt to taste
Filling
Fine herbs
Skin of 1 mango in pieces
Mango Sauce
1 soup spoon of minced mango skin
1 cup of minced mango
1 cup of water
1 tablet of chicken stock
Nutmeg to taste
Instructions
Cut the chicken breast into fillets and coat in garlic, salt and lemon. Roll the fillets, putting fine herbs in the middle and pieces of mango skin. Secure with toothpicks. Leave in the oven to bake in a pyrex tray. To prepare the sauce, put all the ingredients into a pot and leave to cook until it reaches a smooth consistency. |
